Read full reviewVia Diningcity hadden wij een 5-gangen diner gereserveerd bij Ivory in Nijmegen. Bij aankomst werden wij hartelijk ontvangen en we mochten zelf een tafel voor 2 personen uitzoeken. Wat ons alleen opviel was dat de inrichting vrij kil is. Werkelijk alles is ivoor wit ( vandaar uiteraard ook de naam Ivory), maar had naar onze menig toch sfeervoller en warmer gemogen. Ik zou ze hierin wel kunnen adviseren als eigenaar van een keuken en interieur bedrijf 😉
Maar dat terzijde, het diner:
als eerste kregen wij een amuse van blauw ader schuim, verse passievrucht en crumble van hazelnoot.
De tweede amuse was een knolselderij soepje met lente uitjes en knolselderij kaantjes.
De eerste gang: kort gegrilde zalmfilet overgoten met een dashi vinaigrette, wasabi mousse, komkommer, tartaar van gamba’s met daarop wasabi ijs.
De tweede gang: een soepje van forel, bosui, sereh en gerookte paprika.
De derde gang: snoekbaars filet met venkel en inktvis ringen, gele wortel met daaronder quinoa spinazie en een bisque van pompoen en kreeft. Zwarte stokje erop is aardappel met inktvis inkt.
Tussen de derde en vierde gang kregen we eerst een spoom van groene appel, yoghurt en cava.
De vierde gang: eendeborstfilet met rodewijn jus, schuim van aardpeer, aardappel, rode bietjes, marshmallow van rode biet op een bedje van gemarineerde balsamico sjalotjes, artisjok en schorseneren.
Voordat het dessert werd uitgeserveerd kregen wij eerst nog een pré dessert van een hoorntje gevuld met mascarpone ijs een mousse van bloedsinaasappel en compote van bloedsinaasappel.
De finale: het dessert zelf was spongecake van mandarijn en sinaasappel, ijs gemaakt van rijst, pompoen siroop, passievrucht /mango mousse in een wortellaagje en bastogne crumble.
Alle gangen waren in een woord fantastisch. Mooi uitgebalanceerd en afgestemd op elkaar. Je ziet en proeft dat het met liefde gemaakt is.
